Definitely not a string instrument as one tiny turn of the key, or change in air moisture can alter the string length. That leaves only one possibility.

Flawless logic. The oboe has consistent pitch because there’s nothing really adjustable in one. Not in a single performance anyway – you can mess with the reed but only really between performances. So, simply, it is the instrument most likely to give you a reliable note.
